October Recipe of the Month

Sweet Potato Casserole

Ingredients

  • 4 Medium size Sweet Potatoes - cubed
  • 1/2lb Brown Sugar
  • 3/4 cup Pecans
  • 2 Tablespoons of Honey
  • 4 Tablespoons of Softened Butter
  • 1/2 Cup of Milk
  • 1 Bag of Mini Marshmellows

Directions

Pre-Heat the oven to 350 degrees. In a pan of boiling water, cook sweet potato cubes until tender. Drain water and mash using a potato masher. Fold in brown sugar, butter, honey, and milk. Spread mixture into aa 9x13 baking pan. Bake at 350 degrees for 15 minutes, sprinkle pecans and mini marshmellows and bake for another 5 to 7 minutes, or until top crust is brown. ENJOY!
